I tried making Gordon Ramsay's smokey pulled pork recipe last night but for some reason the pork butt I bought took much longer to cook than I originally thought (recipe calls for 5-6 hours at 275 F). I typically go to bed early and I figured the butt needed a couple more hours to cook, so I enlisted my boyfriend to take it out of the oven when it was ready and shred it. Unfortunately my boyfriend not only disgregarded my instructions to wait until the meat was "falling off the bone" but he also has no idea what "shred" means. I discovered this morning that he had taken it out before it was ready, torn it into chunks, and then put it in the refrigerator.
Is there any way I can salvage this? I've read that you can save an underdone pork butt by braising it but I'm not sure if that works when the pieces are almost bite-sized and the meat has been refrigerated. Should I just call this a loss and toss it?
