ELI5: My refrigerator's water droplets and temperature setting. explainlikeimfive

I, rather recently, moved into my first flat (I am a student) and have had a few mishaps with it. One of which is the fridge: there is quite a large build-up of water droplets on the ceiling(?) of the fridge.

I assume this is due to a condensation build up/water retention of all the accumulated vegetables living in there but would like this to be clarified, is this common or is it a problem with the unit itself?

If it's a problem with the unit then it can be replaced, but if it's a problem with the temperature of the fridge then how do I change this? My fridge has a dial numbered 0-5 that I have periodically tried changing but I can't figure the thing out.

Which setting do I want to go all Frozen up in this bitch?

Thanks.
