Cooking frozen vs thawed food Cooking

Why does a frozen raw hamburger patty taste better if it's grilled while still frozen instead of first thawed out? I mean thawed in the refrigerator, not in the microwave.

The same happened when I made homemade chicken pot pies. The directions said freeze before baking, but I ignored them and put one pie directly into the conventional oven after making it, and it came out terrible, while the one that was first frozen overnight came out great.

My cooking skill is barely beyond being able to boil water.
