ELI5: Why does food smell different when it is hot compared to when its cold or before its cooked? explainlikeimfive

When I heat leftovers up for lunch the next day it smells completely different when I get it out of the microwave vs. a different smell (or no smell) when it comes out of the refrigerator prior to heating it up.
