Cheese storage question (possibly wrong /r) Canning

Hello all.. not sure where to find the answers on this so I thought maybe you guys would know since you put stuff up for long periods of time.... perhaps you also know some about cheese.

I have a weird and kind of gross sounding question.. How long will vacuum sealed well packaged cheese last if never opened and stored in a dark cold refrigerator?

I'm just being more curious than actually wanting to eat these cheeses. I recently found some very expensive cheese that had been forgotten about. At first I thought about trying to see if it was good then thought better of it and decided no way.

Here is the back story.... Our church has a separate building that is used for the youth... it gets very little foot traffic but has an industrial refrigerator in it... usually only has a few drinks in it at best. Our main church updated the kitchen and rather than throw this fridge out it was put in the youth house. The youth one day had a fundraiser and made some gift baskets using various expensive cheese meats and such. Somehow they had a few baskets that didn't get picked up and some extra cheeses. Everything was tossed except hand churned butters and these vacuum sealed cheeses. I've seen them off and on for about 2 years now. They honestly look excellent. The sealing plastic is very thick clear plastic and the cheese is not discolored or hard.. it honestly looks no different now than if i was to buy new from the store.

How would you even know if it was "good" or "bad."
Will cheese store indefinitely if processed right? I've seen bad cheese.. usually mold or consistency change... this cheese has neither.
