Years ago my friends got me hooked on buffalo chicken dip. The stuff is like crack. But when I tried making it myself, I realized just how horrible the stuff is for you. After a lot of trial and error, came up with a healthy buffalo chicken dip recipe that is very lean, easy to make, and tastes almost the exact same as if you had made it with full fat cream cheese, ranch dressing and shredded cheese. Those same friends who got me hooked years ago can't tell the difference between mine and theirs.
Ingredients

5# boneless skinless chicken breast

Two 8oz packages of fat free cream cheese (you can use 1/3 fat or full fat if you prefer, it won't change anything but the macros)

~12oz of Frank's Red Hot (or hot sauce of your choice) When I calculated the calories and macros, I used 4 ounces as the serving size, and each serving comes in at around 125 calories, 3g fat (0 saturated), 1g carbs, 20g protein.

Total cost: around $16
1) Put 5# boneless/skinless chicken breasts in a slow cooker on low for five hours (stir or flip them about halfway through or the tops may get a little dry)
2) Once it's done, drain the liquid out and shred the chicken. It's fastest/easiest if you have a hand mixer, but otherwise you can use two forks.
3) Soften and add two 8oz blocks of fat free cream cheese and about 12oz of Frank's Red Hot, and mix generously. Add more or less Red Hot depending on your taste preferences.
4) Enjoy either with chips, or even healthier, just eat with a spoon/fork. Leftovers keep very well in the refrigerator and reheat well in the microwave.
