I made a batch of hot sauce about a month ago. The recipe says that it can keep refrigerated for six months. I think I've seen other hot sauces keep unrefrigerated, and tabasco is aged for like three years.
I would like to age mine as long as possible, but I'm not sure if the 6 month thing is a hard and fast rule. Also, I would like to keep it unrefrigerated in my closet, but am not sure if that is a good way to store it.
Here is the recipe: I blended thai chilies with an onion, vinegar, chipotle powder and salt. It has been sitting in my refrigerator since.
