After working with my starter for over a week, it was finally ready to go! This was my first bread using starter instead of yeast. I followed this recipe. I definitely need to make some adjustments on how the second rise happens (I did 1.5 hours at room temperature and then 8 hours in the refrigerator), but my sourdough panini tastes wonderful!
