First off, I apologize for no photo. I'm going to make another batch this weekend, so I will get a photo up in a day or two. Secondly, this is a good addition to a lunch if you need a boost of fat and if you're a big fan of pumpkin.
Pumpkin Fudge Serves 12
- 13oz Coconut Butter
- 1 can Pumpkin (Puree)
- 1 tsp Vanilla extract
- 1 tsp Cinnamon
- 1/2 tsp Other pumpkin pie spices: nutmeg, ginger, allspice
- 1/2 tsp Salt
- 1/3 cup Stevia (or your preferred 0 calorie sweetener)
- 12 Pecans

Have a 15x9" baking dish set aside. Place a pot on the stove, medium heat. Empty the jar of coconut butter (also called creamed coconut) into the pot. Let this melt completely.

Add in the vanilla, cinnamon, spices, salt, and Stevia. Stir.

Open the can of pumpkin puree, turn off the stove, and add to the pot. It's going to firm up fast, so stir until its all combined!

Dump your mixture into the baking dish and spread it out. Once it's all about level, add your pecans. I use them to mark my squares, so each square gets one pecan.

Place into the refrigerator for 15 minutes or until it's firm. Cut into 12 squares.
